It’s not an accident that kale is an emblem of today’s healthy living culture. Loaded with vitamin C, vitamin K, lutein, vitamin A, and many more micronutrients, this cruciferous vegetable is widely considered to be one of the healthiest foods one can eat. Additionally, when kale is combined with other complementary foods, its nutritional value is greatly increased.
A recent study analyzed the combination of kale with lentils and found this food combination to be especially complementary in providing us with nutrient richness. Interestingly, this study focused on two areas of nutrition: mineral nourishment and "prebiotic nutrients." In this study, researchers determined that the combination of prebiotic nutrients and mineral nutrients in kale-plus-lentils were especially complementary, as each food provides the nutrients that the other one lacks. In each nutrient category, kale and lentils were able to "bring something special to the table" that the other could not, resulting in outstanding combined nutrient richness.
For Quokka's newest salad featuring both kale and lentils, we combine these two amazing foods together and add curried butternut squash to create a dish that is well-rounded in both flavor and in nutrition.
